I was curious of people who have been playing Caliphate Nights-- what True 20 books are required to support it? Are there True 20 rules and supplements that you would recommend?

I you need is the true 20 core system book from GR.. but here are some additional T20 books I would sudjest you pick up
True Sorcery
True20 Adventure Roleplaying
True20 Bestiary

I have found True20 Core Rulebook to be pretty much all I have needed. The True20 Bestiary is helpful for some additional beasts. I have been working on writing Classics for PCI. Henry has the first one and I am in the process of working on two more. (Next year maybe at this rate)
